Saturday Pancakes

Good morning! 

Hope everyone is having a beautiful Saturday. Today I made some delicious healthy gluten free, dairy free pancakes. 

1 cup gluten free flour 

1 tsp baking powder 

1 tsp ground cinnamon 

1 tsp ground ginger 

1/4 cup coconut 

1/4 blueberries -fresh or frozen- 

2 tbs coconut oil 

1 1/4 cup almond milk 

1 egg 

Mix well. It needs to be on the liquid side. Then heat up a small frying pan. Add a tiny bit of oil and pour about 2-3 tbs. when the poured mix forms little bubbles all over then it's time to flip to the other side. 

I served it with honey and topped it with coconut, pistachio and cinnamon. 

The sweet sunshine smoothie for two cups had: 

1 peeled avocado 

4 unpeeled carrots but washed very well 

1 peeled mandarin 

3 peeled red apples 

1/2 cup almond milk 

1/4 cup water 

1 tbs ginger 

Blend and drink! I topped mine with coconut and rosebuds
